Growing

Rocket can be sown from February to September. The seeds should be up to 1 cm deep and spaced 0.5 cm apart in rows. It takes around six weeks before the rocket can be cut for the first time. Rocket flowers very quickly if conditions are too dry. If this happens, the plants can be cut at a height of 4 cm and will sprout again. To ensure the ideal rocket harvest throughout the summer, it should be resown every 2-3 weeks.

Nutrients

Rocket contains high levels of vitamin A (retinol) as the preliminary stage of the provitamin β-carotene. When it comes to minerals, rocket contains lots of calcium, while phytochemicals are represented by carotenoids and, like all mustards, glucosinolates, which are responsible for the typical taste.

Preparation

Rocket should be eaten as fresh as possible.
